Renowned baker Mattias Ljunggren acknowledges the strong reactions. He notes that traditional Swedish dishes evoke a sense of pride, with a widespread belief that they should not be altered. “When it comes to classic Swedish foods and pastries, I think there is a sense of pride and a feeling that you shouldn’t tamper with them. It’s also a topic where Swedes have something to say—we know how it should be,” he commented.
