Researcher urges Faroese to preserve butchering skills and use offal

Faroese people should preserve the tradition of butchering sheep and making use of the offal, especially in case of sudden crises, researcher Elisabeth Skarðhamar Olsen told KVF.
Olsen, an assistant professor at the University of the Faroe Islands, has researched food self-sufficiency and food security. She said the skills could prove important if a crisis disrupts food supplies.
Agricultural adviser Jens Ivan í Gerðinum said in KVF’s radio news on Monday that about 80 per cent of sheep offal is discarded. Olsen said this was not sustainable and welcomed efforts to encourage people to make use of all of it.
