The 2026 Nordic Michelin Guide, released Monday evening in Copenhagen, awards a second star to Helsinki’s Grön, making it Finland’s second restaurant to hold two Michelin stars alongside Palace. The guide also grants a first star to Helsinki’s Boreal, bringing Finland’s total to eight starred restaurants.

Grön, led by head chef Toni Kostian, focuses on seasonal Nordic ingredients with a locally sourced menu. Boreal, under Pasha Demin—who trained at Copenhagen’s Noma before arriving in Finland from Russia in 2022—emphasizes fermentation and hyper-local foraging.

The retained single-star restaurants in Finland are Demo, Olo, and Finnjävel Salonki in Helsinki, Vår in Porvoo, and Kaskis in Turku. The Nordic Guide covers Denmark, Sweden, Norway, Iceland, and Finland.
