Faroese restaurant PAZ retains two Michelin stars

The Faroese restaurant PAZ, owned by chef Poul Andrias Ziska, will keep both Michelin stars it was awarded last year, the guide confirmed Monday in its annual Nordic rankings.

The announcement came during a ceremony at Tivoli in Copenhagen, where Michelin unveiled its 2026 selections for Nordic restaurants. According to the guide’s criteria, one star denotes “an especially good restaurant in its category,” two stars signal “fantastic food worth a detour,” and three stars mark “exceptional culinary art worth a journey.”

PAZ, located in the Faroe Islands, was the first restaurant in the archipelago to earn two Michelin stars when it received the honor in 2025.
